I’ve said this before and I will say it again – I love coconut and even more I love green chutney. Given how versatile Green Chutney can be, I am always prone to making too much of it aspiring that I will use it for vegetarian sandwiches, in chutney-eeda pattice, with my Dhandar and other amazing Parsi dishes that dreams are made of.
However, the reality is that no matter how much I use it, I always end up having a little chutney that I don’t quite know what to do with – after all there is only so much Dhandar and sandwiches you can have in a week.
Which is why this week I decided to give my leftover chutney a bit of a makeover as a fancy bake dish that everyone would gobble up. Since green curry – which is also made with most of the ingredients that chutney is made with – goes well with prawns I went a step further and decided to make a prawn bake dish rather than the usual chicken fest. Here’s how you can make it at your home too – ingredients below the post as usual.
First, wash the prawns and marinate with salt, turmeric and red chilli powder. Now, in a pan, heat some oil and fry the flour. When the flour starts turning brown, add in the green chutney. Once the mixture starts sizzling, you can add in the prawns.
Add about a 1/2 cup water ensuring that the consistency doesn’t become too watery, cover and let the prawns cook for about 5 – 7 mins on a slow heat. Once the prawns are cooked, stir in the corn and add some salt to taste – allow this to simmer on a slow flame for 10 minutes before switching off the flame.
Meanwhile, in a big crockpot get about 4 cups of water to boil and add in the pasta. Cook for about 8 – 10 minutes.
When the pasta is cooked, strain the water using a colander allowing all the water to drain out.
Now that both your sauce and the pasta is ready, preheat the oven at 200 degrees Celcius and layer the bake dish with the pasta and the sauce. Ensure you mix this well and that the prawns get to every corner of the casserole – you don’t want your square of the pasta to not have any prawns do you?
Add some grated cheese on top and bake at 200 degrees Celcius for about 15 minutes until the cheese is golden and crispy. Voila! your prawn bake dish is ready..
To make enough for 6 you will need:
2 cups Green Chutney
300 gm Prawns
2 tsp Red Chilli and Turmeric Powder
2 tbsp wheat flour
1 tbsp oil
150 gm corn
2 cups dry pasta
Water to boil pasta
1 cup grated cheddar cheese
Salt to taste
